Police said after Laffoon was restrained, she head-butted a second officer while he tried to seat belt her into the transport van.
Investigators said it took seven deputies to force Laffoon into a restraint chair at the Clay County Detention Center.
The two assault charges and the resisting arrest charge each carry a maximum penalty of a year in prison and $1,000 in fines.
